COCONUT & MANGO CHIA SEED PUDDING1.5 cups coconut milk
6 tbsp chia seeds
5 tbsp shredded coconut
5-6 tbsp maple syrup (or stevia - adjust to suit your sweetness level)
1/3 vanilla bean pod
fresh mango, sliced
- In a bowl, combine the coconut milk, chia seeds, shredded coconut, maple syrup/stevia and vanilla bean pod. Whisk until well combined.
- Let the mixture sit for about 30 minutes at room temperature and then give it another quick stir , place in the fridge and let sit overnight
- Remove from fridge the next day and ensure the chia seeds have ‘gelled’ and your pudding is a nice thick consistency
- Grab some serving glasses and portion out the pudding, topping with mango and shredded coconut.
