Date & Walnut Cake

For everyone celebrating Ramadan (or anyone who loves dates like us!) here’s a fantastic recipe to break the fast. Dates and walnuts make this cake rich tasty and delicious with warming cinnamon and vanilla to compliment.


2 1/2 cups of dates, pitted and chopped
1/2 cup of raw walnuts, coarsely chopped
1 cup white sugar or sugar alternative
1/4 teaspoon sea salt
2 teaspoons of cinnamon
1 teaspoon of vanilla extract
1 tablespoon baking powder
1 1/4 cups of wholewheat flour
4 egg yolks
4 egg whites


Preheat oven to 300 degrees F (150 degrees C). Grease an 8-inch square baking pan.

In a large bowl, combine dates, walnuts, sugar, baking powder, flour, sea salt, cinnamon and vanilla.

Stir in egg yolks. In a large glass or metal mixing bowl, beat egg whites until stiff peaks form.

Fold the whites into the fruit/nut mixture until no streaks remain.

Spoon into prepared pan.

Decorate with walnuts before placing in the oven.

Bake in the preheated oven for 90 minutes. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

Serve with a glass of milk or tea.
